4 ingredient chia pudding

This is a texturally delicious, fuss free breakfast option. Chia seeds are high in fibre, omega-3 fatty acids and minerals so they are a great option to start your day. Plus, this recipe is dairy and gluten free as well as suitable for vegans.

Serves 1

INGREDIENTS

  • 3 tbsp of chia seeds
  • 1 cup of plant-based milk (either soy or almond)
  • 1-2 tsp of sweetener (stevia, xylitol or maple syrup)
  • Fruit of choice (passion fruit or berries go nicely with this recipe)
WHAT TO DO
  1. Mix all ingredients, except for fruit, in a jar.
  2. Leave to congeal overnight in the fridge
  3. Top with fruit and enjoy!
