Serves 3-4 people
- 3 packed cups or large handfuls of cos lettuce,
- 1 carrot, ribboned
- ½ red onion, thinly sliced
- 1 x 180g can of tuna, drained
- ¾ cup of canned chickpeas, drained
- ½ cup of grated parmesan cheese
- 1 heaped tbsp of whole egg mayo
- 4 tbsp of extra virgin olive oil
- 2 tbsp of white wine vinegar
- Good pinch of salt to taste
- Cracked pepper
- Combine all ingredients in a bowl.
- In a small bowl, combine all the ingredients for the mayo vinaigrette.
- Pour vinaigrette over salad ingredients. Mix well, then serve.
