Crunchy Cos Tuna Salad

Serves 3-4 people

INGREDIENTS

  • 3 packed cups or large handfuls of cos lettuce,
  • 1 carrot, ribboned
  • ½ red onion, thinly sliced
  • 1 x 180g can of tuna, drained
  • ¾ cup of canned chickpeas, drained
  • ½ cup of grated parmesan cheese

Mayo vinaigrette:

  • 1 heaped tbsp of whole egg mayo
  • 4 tbsp of extra virgin olive oil
  • 2 tbsp of white wine vinegar
  • Good pinch of salt to taste
  • Cracked pepper
WHAT TO DO
  1. Combine all ingredients in a bowl.
  2. In a small bowl, combine all the ingredients for the mayo vinaigrette.
  3. Pour vinaigrette over salad ingredients. Mix well, then serve.
